EASY AF WEEKNIGHT DINNER :: Lemon Love Salmon by The Skinny Confidential

Well, hello & happy Monday!

Sorry for ghosting on Friday. If we are being transparent, after Wednesday’s post – which was one of my favourites I’ve ever written tbh – I didn’t have much to say. It’s also such an important topic that I figured I’d let it shine in it’s glory.

THAT SAID-

I’ve also been majorly slacking on the cookbook club {!!!!!} SO I’m going to finish it off where we left off with The Skinny Confidential!

Y’all know I have a major girl crush on Lauryn Evarts – she not only inspired me to start this little blog of mine but she really helps me live my best life. Is that weird? I get so much value from her content but especially from the recipes.

Her recipes are EASY, healthy, & no nonsense.

Her Lemon Love Salmon from The Skinny Confidential Book is no exception! This has been a favourite of Erik’s.

It’s also so easy, it’s silly. This takes about 20 minutes from start to finish. The prep is minimal, it all cooks in the oven & the flavours are perfect together. This is one of our favourite Sunday dinners but also one I have in my arsenal for when life is too busy and I don’t have time to deal.

It’s basically oven roasted salmon with a kick – don’t skip out on the cayenne – trust me! It really adds to the dimension of the dish.

I added the capers to mine, Erik forgoed so feel free to add them or not – however, you can’t miss the lemon juice at the end! It ties everything together & really balances the flavours out. As far as oil, I used olive oil vs palm oil. We didn’t have any rosemary on hand so I forgoed it this time.

This may sound crazy but I think it would be SO GOOD with grapefruit if you are looking for a lemon sub! I will DEF give that a try in the near future.

As far as wine, I personally LOVE Willamette Valley Pinots with salmon. It’s one of my favourite pairings! It’s also delicious with a sparkling rosé.

While we’re talking salmon, let’s talk the benefits { source } ::

Lemon Love Salmon

Serves 2

ingredients

2 Salmon Fillets
1 tsp of olive oil
Sea salt, to taste
Black Pepper, to taste
Cayenne powder, to taste
Chili Flakes {optional but reccomended!}
1 cup of cooked quinoa
1/2 head of broccoli, chopped & steamed
1 lemon
20 capers
Rosemary

instructions

Preheat Oven to 450 degrees Fahrenheit. Rub the salmon filets with oil & season with salt, pepper, cayenne, and chili flakes if using. Place salmon on broiling sheet & bake for 5 minutes.

Change heat to 500 degrees Fahrenheit & turn salmon. Boil for an additional 5 minutes.
NOTE: If salmon has skin on, bake for 10 minutes without flipping. Be sure to cook it skin side down.

Make a bed of cooked quinoa on a plate. Place salmon fillet on top. Squeeze lemon juice on top & garnish with additional lemon slices if you want. Add capers & more cayenne. Top with rosemary, optional, & enjoy!!
