Seriously, though.

I’ve heard about Cabo from family, friends, colleagues, and other bloggers. Everyone raves about how special, tranquil, incredible it is there.

All I have to say is that it is a MAJOR understatement.

Cabo is probably my new favourite place on Earth and, like Fiji, one of the most special places I have ever been to…

Ever since I’ve been with Erik, he has made all my birthdays so special. In 2014, we did the Ritz Carlton in Half Moon Bay  (seriously, an amazing resort – I can do a post on this) where we had midnight snacks of s’mores and single malts. In 2015, we did Jenner, California where we whale watched and star searched. This was my 30th, so we really wanted to do something special.

Immediately, Mexico was on our mind.

I’ve never been to Cabo, Erik has never been to Cabo so it was a perfect place for us to have a special getaway just the two of us.

We went big and booked our room at the One & Only Palmilla, and counted down the months / weeks / days / seconds until finally it was the end of May.

So, when you arrive at the One & Only, they greet you with popsicles made from fresh fruit. I had the papaya and coconut milk one. It truly set the tone.

We were brought to our room, where we changed into swimsuits immediately, headed to the rescue, and gorged on filet tacos, guacamole & salsa, and spicy margaritas.

Our room was beautiful. The decor was incredible, there was incense everywhere, the shower and bathtub was unlike anything I’ve ever seen, we had a private plunge pool and a huge terrace for breakfast & sky gazing. It was PERFECT>

We had the evening, so we roamed around the property, checked out the pools (they have an adult’s only pol with a swim up bar – yes plz), and we did dinner at the resort with some bar bites and plenty of tequila.

At this point, we’ve done a few impromptu 24 hour international trips {here & here} so we’ve gotten pretty good at not making plans and seeing where the day takes us.

On the morning of my birthday, my boyfriend went golfing at the golf course at the Palmilla (which was ocean cliff-side – I can bring him in to make posts on the golf courses if people are interested) & I grabbed breakfast which consisted of freshly pressed watermelon juice, champagne, chile relleno and then they surprised me with a birthday ice cream dessert… don’t mind if I do!

I met my boyfriend at the adult pool, where we just chilled for hours, walked around the beach, had plenty to drink, and just enjoyed each other’s company.

We had reservation at a restaurant called Edith’s, so we head into the town of Cabo from the resort.

Guys, if you ever go to Cabo, this place is a must.

We had the Edith’s Platter #3 – if I recall correctly, which consisted of a rib-eye steak, prawns, and the biggest, most decadent lobster I have ever seen or tasted. It literally melted in your mouth & the steak was grilled to perfection. We finished the evening at the bar at One & Only with some reposado tequila.

They are also known for their at the table Caesar Salad

ALSO, for dessert TRUST ME on this. Get a Dessert cocktail. It is one of the coolest experiences ever. They prepare it for you Blue Blazer style. I had the tequila, brown sugar, kahlua cocktail and it was off the charts.

Well, let me just say I am so, so, so glad Erik went golfing that morning, because before we went to Edith’s we set up deep sea fishing for the next day.

This was one of the most unforgettable experiences of my life.

We reserved a boat for 7:00a – 12:00p noon (you can take one out for as much as 7 hours) for just hte 2 of us (& 2 trained fisherman).

Since we knew we had an early morning, we had room service set for a 6am in-room breakfast, which they set up on our terrace for sunrise. Waking up to that was a major treat! (this was a very special memory from the weekend)

Then, we got ready for the day ahead.

We loaded our boat and were off! I’ll admit, it took us a while to find the schools of fish… I’m talking we were sailing from 7:00am – 10:30am searching. Finally we found schools of Yellowfin Tuna.

[with a TON of help from my boyfriend & the fishermen,] I caught my first fish ever!

This was a crazy experience! For details, I will spare on the blog (let me just say, I was NOT prepared for that part of fishing) but it was one of the most memorable experiences of my life.

We got to the beach, where they skinned & filleted the tuna for us – literally beachside – and gave us the meat for us to have for dinner that evening. We brought it to the restaurant (the chef was expecting us!) and they set us up for a reservation that evening.

However, we were now late to our lunch reservations for Flora Farms!

Flora Farms was probably one of the coolest restaurants I’ve ever been to. So it’s a market, garden, restaurant, bar, farm, ice cream shop…. the list goes on.

Pretty much, everything is insanely fresh and likely grown on property.

They are known for their pizzas (YES, PIZZAS) & seriously the best pizza I have ever had. We had a pizza with tomato sauce, cheese, bacon, sausage (SERIOUSLY SO GOOD), and arugula mixed with lemon and parmesean.

HOLY, yum. I still cannot get over how amazing this pizza was! I had it with a hair of the dog cocktail – their play on a bloody mary – think fresh tomato & beet juice and garnished with garden findings. yes, plz.

Afterwards, we walked the farm over some guanabana ice cream and hung out.

Not going to lie though, as rad as Flora Farms was, I was fading fast from being in the sun all day on the boat – hence why I do not have a lot of photos from there.

Despite that, if you are going to Cabo, you HAVE to sepnd the day at Flora Farms! HAVE to. Trust me. It was one of the coolest restaurants E & I have ever been to.

We got back to the hotel and laid down to recharge.

Then, we finished the day at the beach and by the pool, with plenty of margaritas, and plenty of chilling.

So all in all, a perfect day.

We got ready for our reservation and prepared ourselves for THE most magical dinner of our lives (seriously, this is in my top 5, and probably #1 on my list).

We started at the bar, because we LOVED our bartender, Edgar. He was as nice as can be, hilarious, and extremely hospitable for some more Reposado tequila.

As we headed to our table (which was beachside, under the stars, underlit a glowing umbrella – #aesthetic), there were fireworks! Like, could this be any more perfect?!

We took our seats, and got ready to feast on our catch!

But not before some wine….. so this was really cool – we talked to the sommelier and he recommended a mexican red. It was my first time to have a mexican red. Not only was it divine, but it paired beautifully with the fish. I am actually a fan of reds with fish – especially for tuna or salmon – so this was up my alley.

I forget the actual descriptions, but 1 was tar tar style, 2, was wrapped with avocado and green onion (still raw), and 3 was grilled.

It was my first time to have something so fresh from the sea. The texture was unlike anything else and it literally melted in our mouths.

We finished the evening with some anejo, a cuban cigar & watched the stars. One and only leaves binoculars and a star map in your room for star gazing!!

The next day was sadly our final day (I could of used an extra month week there).

So we did breakfast again on our terrace and stayed at the pool until lunch and our flight.

We shared nachos, had our final margarita, and just took in the scenery.

PS – They were some of the besttttt nachos we have ever had. Seriously though, the food there was so simple yet so delicious.

All in all, we really didn’t do much – but just even writing this post has already put me in blissmode.

Cabo was easily one of the most amazing, beautiful, special places we’ve been to & the One and Only is a spectacular resort worth every penny.

This was – hands down – the best birthday of my life and I have a feeling 31 won’t be able to hold a torch to this one.

It’s weird, like, the entire trip felt like a honeymoon? I guess that’s what Cabo & plenty of tequila will do for you.

If I had to choose a favourite memory – it had to have been breakfast on the terrace with just Erik as the sun rose. Just the two of us.

Even just being there with him was the best. In fact every single day we both sigh and say “I miss Cabo”.

…And look at me being all romantic over here!

Anyways, this will absolutely be somewhat a regular trip for us both. Especially when we need to bliss tf out of life. I am pretty sure at every given moment, I was in a bikini with tequila in my hand. I am 100% okay with all of that… and I’m pretty sure Erik is too 😉

As much as I love travel, I am looking forward to spending the summer in San Francisco… but I am trying to get another Cabo date on our calendars late this year or next… stay tuned! Anywhere else we should go??

  • Oh my gosh, these photos make me want to book a trip to Cabo immediately. I live in LA but haven’t ever made the journey South…I guess because I always equated it to college spring break trips. Clearly I need to reassess…it looks so peaceful and perfect!

    • OMG trust me, it’s the TOTAL opposite (maaaaajor introvert/homebody over here)! Cabo San Lucas is party city apparently, but San Jose del Cabo is where it’s at. Don’t get me wrong, there’s still PLENTY of tequila to be had, but it’s way more relaxing & just pure bliss. And the fact that it is 3 hours from California makes it even better! If you go, add Edith’s and Flora Farms on your list! Let me know if you go!!! x Shannon
